The Poulet Rouge supplied by Joyce Farms are from the same breeding stock used in France for the world famous Label Rouge program. Our fowl are a true slow-growing Heritage breed that takes a full 77 days to mature. This additional development time is responsible for the breed’s exceptional marbling and a primary reason for its impeccable flavor.

We source quality, local Louisiana products whenever possible. For instance, we use P & J Select oysters from right here in the French Quarter, baby spinach from the nearby New Orleans neighborhood of Hollygrove, and our French Quarter pizza kitchen gets as many fresh Louisiana eggplant as we can from just down the river in Plaquemines Parish.
